1 egg |
100 ml oil |
150 ml milk (or yogurt) |
3 tbsp wholemeal flour |
1/2 tbsp baking powder (6 g) |
Preparation
- Grate the apples. Add honey and cinnamon to the grated apples and stir.
- In another bowl, prepare a coating for phyllo dough sheets by mixing beaten egg, oil, milk (or yogurt) and flour. After that, gently stir in half a tablespoon of baking powder.
- Then cover the tray with baking paper or coat it with a little bit of oil.
- Coat three phyllo dough sheets, each with 3-4 tablespoons of prepared coating, and stack one on top of the other. Then coat the third sheet with cottage cheese and cover with a portion of grated apples. Roll the phyllo sheets and place the roll in a baking pan.
- Repeat the procedure with the remaining phyllo dough sheets. Try to distribute the amount of cottage cheese and grated apples evenly.
- Bake in a preheated oven at 180 °C (350 °F) for 30 minutes.
Cover the hot pie with a clean cloth and let it cool down a bit. Apple and cheese pie is delicious both warm and cold. If you plan to eat it the next day, first wait for it to cool completely, then store it in a closed container and keep it in the refrigerator. With ready-made phyllo dough sheets, the preparation is very simple, and everything is mixed, coated, and rolled relatively quickly. For a healthier version, you can choose wholemeal or buckwheat phyllo dough to reduce or eliminate gluten intake. Apple and cheese pie is a generally healthy dessert with no added white sugar, where the natural sweetness of the apple and cinnamon comes to the fore.
Sometimes the sweet smell of pie is enough to bring us back to our childhood, but also to create some new memories that we fondly remember.
When it comes to choosing apples, it is best to choose sweeter varieties that will contribute to the juicy taste with their natural sweetness. In addition, you should also choose harder varieties because they retain their texture better at high temperatures. Harder types are generally more suitable for baking pies and other desserts, while softer ones are more suitable for cooking and preparing compotes or sauces. Some of the suitable apple varieties for baking are Granny Smith, Fuji, Envy, Pink Lady, Jonagold, Braeburn, Golden and Red Delicious. If you are not familiar with the names, you can easily recognise the corresponding type by the fact that apples with a harder texture remain firm when pressed by hand, while the softer ones sag a little. For a richer taste, you can combine several different varieties.
