Ingredients:
400 g celeriac (celery root)
100 g potato
100 g onion
3 cloves garlic
2 bay leaves
1 tsp salt
1/4 tsp pepper
900 water
100 ml yogurt (optional)

Preparation

  • Peel the onion, garlic, celery, and potatoes.
  • Finely chop the onion and garlic, and cut the celery and potatoes into smaller pieces.
  • Pour olive oil into the pot and heat it up. Add the pre-chopped onion to the heated oil. Simmer on low heat for about 2–3 minutes.
  • Then add the remaining vegetables: garlic, celery, and potatoes. Mix everything together and pour in about 900 ml of water.
  • Add 2 bay leaves and season with salt and pepper.
  • When the water boils, cook for about 15 minutes.
  • At the end, beat everything with a stick mixer to get a creamy texture.
  • If desired, pour a little yogurt into the soup, which will give the dish additional freshness.
