Preparation
- Peel the onion, garlic, celery, and potatoes.
- Finely chop the onion and garlic, and cut the celery and potatoes into smaller pieces.
- Pour olive oil into the pot and heat it up. Add the pre-chopped onion to the heated oil. Simmer on low heat for about 2–3 minutes.
- Then add the remaining vegetables: garlic, celery, and potatoes. Mix everything together and pour in about 900 ml of water.
- Add 2 bay leaves and season with salt and pepper.
- When the water boils, cook for about 15 minutes.
- At the end, beat everything with a stick mixer to get a creamy texture.
- If desired, pour a little yogurt into the soup, which will give the dish additional freshness.
