Preparation
- Heat 500 ml of water until it boils, then turn off the heat.
- Combine the corn flour and salt in a bowl. Gradually add hot water and mix gently with a spoon until you get a smooth dough. Leave to cool for 20–30 minutes.
- In the meantime, prepare a baking tray by lining it with baking paper or coating it with a little bit of olive oil.
- Mix yogurt and two tablespoons of olive oil into the cooled dough. Optionally, you can also add some dry chives to the mixture.
- Pour the dough into the baking tray and flatten the mixture with a spoon or shape it as desired.
- Bake in a preheated oven at 200 °C (392 °F) for 45 minutes.
- Cover the baked bread with a clean cloth and let it cool.
Enjoy the taste of pure cornbread. It should be noted that this recipe is intended exclusively for lovers of true cornbread. Bread made only from corn flour will not be as soft as other types of bread. This is because corn flour does not contain gluten, so the dough will not rise. If you want softer bread, you will have to replace part of the corn flour with white flour, as well as add yeast or baking powder. In doing so, you can adjust the ratio of corn and white flour in order to get a bread with a softer or harder texture. However, pure cornbread is suitable for people who cannot tolerate gluten or yeast, is more filling, and has a fuller taste.

An important step in the preparation of pure cornbread is gradually pouring hot water over corn flour, which results in a smoother and more compact texture. To prepare the bread in the photo, I used a slightly smaller pan with a diameter of 30 x 15 cm (11.81 x 5.91 inches).
Baked bread is best covered with a clean cotton cloth and allowed to cool, then stored at room temperature in a bread box, sealed container, or cloth bread bag. Bread should not be kept in the refrigerator, as it will harden further at such a low temperature. Bread prepared only from corn flour has a longer shelf life and can be consumed up to a week from the day of preparation if stored properly.
