Preparation
- For bean spread, it is recommended that you use white beans, but you can also choose some other type. Also, you can either choose dry beans or canned ones. If you use dry beans, soaking is important, so it is best to soak the beans the night before and leave them overnight. After that, discard the soaking water and put the pre-soaked beans in clean water to boil. Cook the beans for about 1 hour, until softened. For a faster version, you can use canned beans that don’t require soaking and cooking.
- Strain the cooked beans and add them to the baking pan. Season with salt, then mash it with a kneader or fork. Spread the mashed beans evenly over the entire pan.
- Next, pour a little bit of olive oil into the frying pan and heat it to medium. Chop the red onion, then add it to the preheated pan. Fry the onion briefly for about 3 minutes.
- Chop the garlic and add it to the pan. The garlic will smell good quickly, so right afterwards add a tablespoon of red pepper and stir everything together. Turn off the heat.
- Spread the prepared mixture evenly in the baking pan over the mashed beans. Then, bake the bean spread for 15 minutes in a preheated oven at 180°C (356°F).
- To prepare the sprats, heat a small amount of olive oil in a frying pan over medium heat.
- In a plate, mix in flour, red pepper, turmeric, and a pinch of salt.
- Roll the sprats in a seasoned flour mixture, then place them in a preheated pan. It is not necessary to defrost them beforehand.
- On a medium heat, fry the sprats briefly for about 5 minutes on each side until golden brown. Top up with olive oil as needed.
- Depending on the size of the pan, repeat the process until you have fried all the sprats.
With prepared sprats and bean spread, you can serve roasted pickled peppers and fresh garlic, which you can top with a little bit of olive oil. This delicious dish can be a great choice for the holidays, but it can also be part of your regular menu, as we should all enjoy the benefits of this healthy fish more often.
