Mushrooms with Cauliflower and Eggplant

Mushrooms can be the ideal main ingredient for many different dishes. This time we will see how well they go well with cauliflower and eggplant.

Preparation

  • Wash the cauliflower and put it into boiling water. Cook over low heat for about 10 minutes until the cauliflower gets soft.
  • During this time, chop the onion into rings and slice the mushrooms. Heat the oil in a pan to medium heat and add the pre-chopped vegetables. Then add 1-2 tablespoons of soy sauce. With occasional stirring, simmer over low heat for about 15 minutes.
  • Slice the eggplant into half-rounds and chop the garlic into small pieces. Add them together in the pan, stir, and simmer for another 5 minutes or so.
  • Drain the pre-cooked cauliflower, add to the pan and stir.
  • Add salt as desired and season with a little bit of basil.
  • Turn off the heat and pour a little bit of olive oil and lemon juice over everything.
  • Finally, chop the almonds or walnuts into small pieces and sprinkle over the mixture.

You can serve the dish as a side dish or main course.
