Preparation
- Wash the cauliflower and put it into boiling water. Cook over low heat for about 10 minutes until the cauliflower gets soft.
- During this time, chop the onion into rings and slice the mushrooms. Heat the oil in a pan to medium heat and add the pre-chopped vegetables. Then add 1-2 tablespoons of soy sauce. With occasional stirring, simmer over low heat for about 15 minutes.
- Slice the eggplant into half-rounds and chop the garlic into small pieces. Add them together in the pan, stir, and simmer for another 5 minutes or so.
- Drain the pre-cooked cauliflower, add to the pan and stir.
- Add salt as desired and season with a little bit of basil.
- Turn off the heat and pour a little bit of olive oil and lemon juice over everything.
- Finally, chop the almonds or walnuts into small pieces and sprinkle over the mixture.
You can serve the dish as a side dish or main course.
