Preparation time: 35 minutes ❀ Difficulty of preparation: Moderately demanding ❀ Number of servings: 4
Ingredients: |
---|
200 g yellow beans |
2 eggs |
200 ml yogurt (or milk) |
1 onion (100 g) |
2 cloves garlic |
2 tbsp rice flour |
1 tbsp apple cider vinegar |
1/2 tsp salt |
pinch pepper |
1/2 tsp turmeric (optional) |
Fresh herbs (optional) |
Preparation
- Add chopped red onion to the heated oil. With occasional stirring, simmer for about 3 minutes until the onion softens.
- Then add the chopped garlic. The garlic will start to smell good quickly, so add the yellow beans and pour a glass of water. In a covered pan, simmer over low heat for about 5 minutes.
- After that, add enough water to cover the yellow beans. In a half-covered pan, cook over low heat for about 15 minutes.
- Towards the end of cooking, beat the eggs in a cup, then add them to the stew while stirring.
- To achieve the appropriate density, mix 3-4 tablespoons of flour in a cup of cold water and, as in the previous step, add to the stew while stirring.
- Pour yogurt (or milk) into the stew and stir again.
- Season the stew with salt, pepper, turmeric, and other spices as desired.
- Finally, mix in a tablespoon of apple cider vinegar, which will give the stew extra freshness.
You can decorate the stew with fresh basil or parsley leaves.
Bon appetit!
