Wild Berry Cake

Ingredients:
Biscuit base
140 g wholemeal flour
3 eggs
1 tbsp honey
1 lemon
4 tbsp milk
4 tbsp oil
1 baking powder (7 g)
Filling
400 g wild berries
2 dl water
4 tbsp cornstarch
1 tbsp honey
Biscuits
180 g dry integral biscuits
1 dl milk
Topping
70 g dark chocolate
180 ml milk

Preparation

Biscuit base

  • Before preparing the biscuit base, turn on the oven at 180° C. Line the pan with baking paper or coat it with a little bit of oil. The recommended size of the pan is 20 x 30 cm.
  • Then prepare the necessary ingredients for the mixture.
  • Mix the flour and baking powder in a bowl.
  • Squeeze the juice of one lemon into a small bowl.
  • After that, break 3 eggs into another bowl without separating the whites from the yolks. Beat the eggs with a mixer until you get a foamy mixture. Continue to mix and add honey, squeezed lemon juice, milk, and oil. Mix everything well.
  • At the end, reduce the mixing to the lowest speed and gradually add flour and baking powder. Mix briefly until the ingredients are combined.
  • Pour the prepared mixture into the pan and spread it evenly with a spoon. Bake in a preheated oven at 180°C for 15 minutes.

Filling

  • To prepare the filling, add 2dl of water and 400g of wild berries to a small pot and bring to a boil.
  • Mix 4 tablespoons of cold water with 4 tablespoons of thickeners in a glass.
  • When the water with the wild berries boils, pour in the whipped mixture while stirring. While stirring gently, continue to cook for about 2 minutes until everything thickens enough. Turn off the heat and let it stand for at least 5 minutes.
  • After that, sweeten the filling with a spoonful of honey or some other healthy sweetener.
  • When you take the biscuit base out of the oven, pour the prepared wild berry filling over the base and spread it evenly with a spoon.

Biscuits

  • Place dry biscuits on top of the filling. Before stacking, dip each biscuit in cold milk. A smaller bowl with approx. 1dl of milk should be enough for dipping.

Topping

  • To prepare the chocolate topping, pour 180 ml of milk and 70g of dark chocolate into a small pot. While stirring gently, heat over low heat until the chocolate melts.
  • Pour the chocolate topping evenly with a spoon over the stacked biscuits.

Before serving, cool the prepared cake in the refrigerator for at least 1 hour. Wild berry cake consists of four simple layers: biscuit base, wild berry filling, biscuits, and chocolate topping.
